Get some mature peaches,
cut apart the pure pulp and pass it through a sifter to obtain a fresh pure peach puree.
Put the peach puree and the prosecco into the refrigerator: these ingredients should be
very chilled at the time you prepare the cocktail.
Prepare the cocktail directly into "flute" glasses. Pour peach puree to half of the height
of the glass, then fill with prosecco. Stir quickly (but gently), and serve.
