Dolce vita
the world famous cocktail from Venice


The recipe is simple, but the cocktail is hard to prepare:
  • fresh white peach juice (filtered puree)
  • prosecco (italian sparkling white wine, use champagne if you don't have it at hand)


Get some mature peaches, cut apart the pure pulp and pass it through a sifter to obtain a fresh pure peach puree. Put the peach puree and the prosecco into the refrigerator: these ingredients should be very chilled at the time you prepare the cocktail.

Prepare the cocktail directly into "flute" glasses. Pour peach puree to half of the height of the glass, then fill with prosecco. Stir quickly (but gently), and serve.
